Cauliflower Roux

Makes approx. 4 cups roux (measure your cauliflower to determine serving size)

Cauliflower Roux recipe
Ingredients: 

1 head of cauliflower (cut greens off)
1/2 Cup of Water

Directions: 

Steam Cauliflower – when tender put in blender(use water from steaming, about ½ cups)
Puree in blender
add kitchen bouquet for colour.
